This just in? Darc, what fucking cave have you been living in?Also anything by Tillamook=God Tier. I have no idea what makes their cheese unique, but I will stress again that their cheeses all have this distinct sharpness to it that I've yet to find in any other dairy farm.

Just found out there is a cheesery called MouCo in Fort Collins. They send their cheeses all over via their online ordering structure, but they also stay local and sell direct to the consumer at farmer's markets and stores around town.Their cheese is really good. They do a lot of soft cheeses, which I wasn't always a fan of, but these made me change my mind. I especially like their ColoRouge cheese (picture lifted from their site). The rind gives it this little extra mmmm, and it's really good on Wheat Thins.

Has anyone else had brunost? It's this wonderful brown carmelized cheese from Norway, and I think it's my favorite cheese just from how strangely "other" it is. I wish I could afford such splendourous cheeses. On my budget I have to stick with American, Swiss, Mozzarella, Muenster and Gouda.That being said those cheeses are good if used in the right situations.

I had roquefort for the first time at a wedding not too long ago. It tasted like windex and sweat. I tend to like most cheeses, but DAMN that was foul.
