They're actually kind of a pain to make. Last time I didn't have a pastry bag so I had to use a ziplock bag with a corner cut off.

Not only is it deliciously bitter, but it's amazingly health for you.

I've developed a love affair with extra dark chocolate. 100% is too bitter for me, but anything within the 80%-90% range is awesome.

Though when it's covering espresso beans, I don't much care how dark it is because, yum, chocolate covered espresso beans.

Any chocolate is fine. I tend to gravitate towards the extremes, though- I love both white chocolate and superdark chocolate the most.

All % are fine, but I like it best in the 40-50 range.
